Valentine’s Day Mini Pepper Pita Pizza


My hunky husband bought me some inexpensive heart-shaped cookie cutters. We haven’t used them to shape any cookies yet. But we have made oodles of fun heart-shaped foods that feature fruits, veggies, and whole grains. Don’t panic about making Valentine’s Day complicated. Just pick a few special things to enjoy together like making a special lunch or going on a bike ride. It turns out that kids really just want time with you. They’ll feel loved whether you give them a giant box of pink colored Nerds or a heart-shaped pita pizza. Why not pick something heart healthy? This recipe is great because it can be whipped up in less than 15 minutes. This is my favorite go-to lunch when we’re in between activities. Use any red toppings that you have on hand. We happened to have a bag of mini sweet peppers. But you could easily use tomatoes, red onions, or regular red bell peppers.

Valentine’s Day Mini Pepper Pita Pizza

Yield: One pita pizza

These pizzas are my favorite go-to lunch for a busy day. It livens up a monotonous week full of sandwiches.


  • Per Pizza You'll Need:
  • 1 Whole Wheat Pita
  • 1 Tablespoon of Marinara Sauce
  • 1/4 Cup Low-fat Mozzarella Cheese, grated
  • 1 Mini Bell Pepper, thinly sliced


  • Preheat your broiler or crank up your oven to 450 degrees.
  • Press a large heart-shaped cookie cutter into your whole wheat pita.
  • Spread sauce and arrange your toppings.
  • Cook for 4-5 minutes, or until the cheese is melted and bubbly.
  • Watch carefully if you're using the broiler - it can turn black in a blink!


The whole wheat pitas are usually in the deli or bakery department of typical grocery stores.

Use any veggies you have on hand. Just make sure they are thinly sliced or grated.
