Don’t you love to trick your kids? This happens each time I create a parfait. My kids feel extra pampered and I didn’t have to do any real work. (I guess that lasts until it’s time to wash the dishes.) If you have any pumpkin purée left over from this granola, use what’s left in this easy pumpkin parfait, fully knowing that you will be praised for being a superstar.
Big P came home from school and sweetly asked, “Mom!!!! Did you make me a parfait?!” He was genuinely excited. My trick is to use glassware. I picked up a set of these beauties at a thrift store for a dollar a piece. They instantly transform any ingredients into something special. Plus these help
me all of us learn what a healthy portion looks like.
Whip up your pumpkin yogurt with an easy ratio of 1 cup plain Greek yogurt, 1/3 cup pumpkin purée, and 1 heaping tablespoon of honey.
I assembled these with my pumpkin granola recipe and sliced bananas and small dices of apple. I helped myself to one of each. I couldn’t decide which I liked better.
- For the yogurt:
- 1 cup of plain Greek yogurt
- 1/3 cup pumpkin purée
- 1 heaping tablespoon honey
- Other layers:
- Pumpkin & Pecan Granola (or other favorite granola)
- 1 apple, small dices
- 1 banana, thinly sliced
- In a small mixing bowl, blend together the yogurt, pumpkin puree, and honey. Be patient with the honey, sometimes it takes a minute or two for it to dissolve. Lick your spoon and get to work assembling your parfaits. Layer your yogurt, diced fruit, and granola to suit the size of your glass or dessert cup. Serve with a spoon and a smile.
Feel free to substitute for any other granola or favorite yogurt.
