Fast Red Pepper HummusYou’ve heard of a milk mustache. But have you heard of a hummus mustache? This hummus was such a hit that they were wearing it as a darling legume-y mustache. My most skeptical eater went to get a spoon because his tongue couldn’t reach the bottom of this glass. SCORE.

We’re having a blast with red fruits and veggies leading up to Valentine’s Day. I’ve wanted to make this hummus f  o  r  e  v  e  r.  Thank you, Valentine’s Day.

Now, if you’re a hummus novice, don’t panic.

  • Serve with fresh crudites like carrots, cucumbers, bell peppers, etc. For Valentine’s Day try some sliced red pepeprs, and grape tomatoes.
  • Make a wrap. Spread on tortilla or flatbread, layer cucumbers, sprouts, and other favorite veggies. For Valentine’s Day use tomatoes or thin strips of red pepper to keep with the red-hue theme.
  • Spread on toasted bread top with sliced avocado and tomatoes. Top with a few cranks of fresh pepper. Heaven.
  • Serve with whole grain chips like corn chips, tortilla chips, or pita chips.

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: About 2 Cups

Fast Red Pepper Hummus

This dip dazzles fresh veggies, pitas, wraps and sandwiches.

Ingredients

  • 1 Can Chickpeas (about 1 1/2 Cups), drained and rinsed
  • 1/3 Cup Roasted Bell Peppers (Can find near the pickles and olives at most grocery stores)
  • 1/4 Cup Lemon Juice (Juice from half a large lemon)
  • 2 Tablespoons Tahini
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Clove of Garlic
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Cumin
  • Pinch of Ground Cayenne

Instructions

  • Combine ingredients in a food processor. Process on high for a minute. Stop and scrape down the sides and process for another minute. Continue to scrape and process until the texture is consistently smooth.
