Add some fruit to a salad and my kids are gobbling. But if the fruit happens to be mandarin oranges, my kids are übergobbling. This salad dressing is very kid-friendly and pairs well with fruity salads or drizzled over grilled veggies or chicken.
This dressing is easy and took me literally three minutes to toss together. The taste is amazing and easily adaptable. Take the reins, my mamma friends. If you like it sweeter or like a bigger garlic punch – make it happen. Start by mixing a half cup of light flavored oil with a tablespoon of sesame oil. I used olive oil. But grapeseed or canola will work well, too.
Add a teaspoon of soy sauce, two teaspoons of honey, and three tablespoons of rice vinegar. Then whisk in a pinch of crushed red pepper flakes and a half teaspoon of garlic powder. Serve right from the bowl if you’d like. (Pssssst… That’s what I do if it wasn’t for dumb Pinterest. I had to get yet another dish dirty to make a prettier shot. Make it worth it for me by serving this to your family. Deal?)
For this salad I just tossed together a few handfuls of baby kale, spinach, and baby swiss chard with almonds and mandarin oranges. I almost peed my pants when I saw that my local grocery store was carrying baby kale. (This happens when you live in a rural area.)
It would be awesome to toss with some snap peas, too. Or grilled asparagus. Or broccoli. Or grilled chicken. Or roasted sweet potatoes. Or… Just go make some and you can ramble on about it, too.
